John 3:16 Mission Donation

RCI Insurance recently donated 232 Thanksgiving dinners to the John 3:16 Mission of Tulsa.

The John 3:16 Mission works to improve the physical, emotional and spiritual needs of Tulsa’s hungry and homeless. Located in downtown Tulsa, Okla., the Mission provides food, shelter, clothing and restorative programs to those in need. Since its founding in 1952, the Mission has served in excess of 4 million meals and provided over 1 million individual shelters to the homeless.

The Law of Oklahoma….

Did you know that Oklahoma has some very obscure laws? They’re quite weird if you ask me. It makes me wonder, what was the reasoning behind some of these laws that we have now?  Lawmakers now days, have many hoops to go through before a law is passed. The people get a vote and we make the decision to allow a law to be passed or not.

Did you know that in Oklahoma, there is a law that says the state of Oklahoma will NOT tolerate anyone taking a bite out of another’s hamburger? What?!?!  Now, as someone who does not like to share food, this law works in my favor. It makes me wonder what is the story behind this law.

Another law in Ada, Oklahoma states that if a person wears New York Jets clothing, they may be put in jail! That seems a bit extreme for not wanting someone to wear a particular team’s clothing. Don’t people like to wear their favorite team’s clothing? How will we announce who our favorite team is if we can’t wear the clothing?! Again, I wonder what happened that people needed to make this law a law.

And finally, there is a law in this great state of Oklahoma that says cars must be tethered outside of public buildings. Huh?! Not sure how my insurance agent would feel about that, if he knew that my car was tethered to two or more other vehicles. I bet our auto insurance would be even more expensive than it already is. Oklahoma Auto Insurance would probably have to have some minor changes to the policies. Once again, I’m left scratching my head and wondering, “What in the world were these law makers thinking?!?!”

Tulsa State Fair

Let me first start out by saying, WOW!  Can you believe it is almost October?!?! And here in Oklahoma that means, it’s time for the




This year they are kicking off the fair with a 5k and fun run to benefit the Leukemia and Lymphoma Society and the Tulsa Area United Way. What awesome organizations to sponsor! This however is unlike any 5k I have ever participated in; it is called the “Corndog Classic” and you can choose to take the “Corndog Challenge” in which at each (3) water stations during the race you eat a corndog, then drink either a beer (21&older) or a lemonade, then it’s time for cotton candy. This sounds like a bad belly ache waiting to happen! But also like a ton of FUN! Plus you get to see the sites of the fair before it even opens!


For entertainment this year the Tulsa State Fair has a great lineup for the Oklahoma Stage, kicking it off September 27th will be Z104.5 The Edge’s Homegroan concert, followed by Randy Houser September 28th, Vertical Horizon September 29th, Eli Young Band September 30th, Jeremy Camp October 1st, Easton Corbin October 2nd, Hot Chelle Rae October 3rd, Theory of a Deadman October 4th, Keith Sweat October 5th, Breathe Carolina October 6th and Midlife Crisis October 7th. Another exciting attraction coming to the fair this year is Disney On Ice “Dare to Dream” which is based on the movie Tangled.

Purple Berry Smoothies

The lovely Ms. Hanna has done it again. She’s brought us a great recipe blog. Hope you enjoy it!


I recently bought a single serve blender and have been blending my little heart out of everything I can get my hands on. I have tried numerous combinations some with coffee and chocolate, some with fruit, some with juice, and tons of others.

My favorite so far is what I am naming “The Purple Berry Smoothie” for this I use:

Two Cups of Fresh Cut: Strawberries, Blue Berries, Pineapple and Black Berries

One Tablespoon: Vanilla Coffee Creamer (I use Coffee Mate)

One Cup: Soy Milk (I use Silk Light Vanilla)

One Cup: Ice

For extra sweetness I add two packets of Splenda No Calorie Sweetner.


Then Blend and enjoy this is a low calorie and delicious treat on a hot day, I can’t get enough of these smoothies I think I have had one every day this week!

You will see once you have blended why I call them “Purple Berry” because they are a beautiful shade of purple once all the ingredients are blended together.


Raspberry Ice-Cream S’mores

I recently found this recipe on Pintrest and made if for my mom’s birthday. It was so simple and tasted amazing! Of course I had a bit more of a challenge because here in Oklahoma in June it is almost always over 100 degrees, so my ice-cream was VERY soft by the time I made it home. This made it easy to mix in the fresh raspberries but it did take quite a bit of time for the ice-cream to firm back up. Once it did I just used an ice-cream scoop to place a scoopful on the graham cracker, mine were not as beautiful as the picture but they were a delicious summer desert and my family loved them.

10 ounces Vanilla Ice Cream, slightly softened
5 ounces Fresh Raspberries
Your favorite hot fudge sauce, optional
6 whole graham crackers, broken in half


1. In a bowl, combine the softened vanilla ice cream and the fresh raspberries. Stir until well mixed.If eating immediately following preparation: Divide the mixture evenly between the graham crackers and assemble 6 sandwiches by placing ice cream on top of a graham cracker half, followed by warm hot fudge sauce (about 2-3 teaspoons, if desired) and then another graham cracker half on top. Repeat with remaining ingredients. Serve immediately.

2. If preparing ahead of time: Press the ice cream mixture into a parchment paper lined rectangular plastic storage container (about 7 1/2 x 5 inches in size). Cover and freeze the ice cream until ready to serve.

3. Remove the ice cream from the plastic storage container and cut into 6 equally sized pieces, about the size of half a graham cracker. Place 1 ice cream square on top of a graham cracker half. Top with warm hot fudge sauce (about 2-3 teaspoons, if desired) and then add another graham cracker half on top. Repeat with remaining ingredients. Serve immediately.
